An Oldie But Goodie Party Appetizer

Liver Sausage Spread is a classic retro recipe that everyone ends up loving even if they are not sure about it at first. Braunschweiger blended with cream cheese, minced onions and pickles plus some seasonings and herbs. This is best served with a classic soda cracker. This recipe is rich, decadent and delicious. It is always a treat.

I know that this will not be appealing to some, but it is truly a delight. Each time I have served this to people ‘who don’t like it” they end up loving it and are turned on to the dark side of braunschweiger!

I had an old friend who used to come over and we would eat this and drink wine and it was always the most satisfying appetizer. As an onion lover, may I suggest serving some additional minced, raw onions on the side along with some capers to add to the top of the spread after it is on the cracker. So very good.

Meet The Braunschweiger

If you have never even heard of braunschweiger, I have posted a picture of this above so that you know what to look for in the store. Buy the Oscar Mayer brand if you are new to this food. It is the least intense flavored of all the braunschweiger.

As a child this was a real treat to eat on toasted white bread with lots of mayonnaise. It was one of my favorite lunches. You can see why I was not very popular in school, bringing a sandwich like this.

Those Are Some Fine Onions

It is very, very important to make sure to mince your onions very finely for this recipe. You do not want to be biting into huge chunks of onions when you blend this dip together. After you chop your onions initially , make sure to run your knife over the onions a few times.

Alternatively, you can put your onion and the pickles through the food processor. You can also grate them on a cheese grater.

I like to serve extra pickles and onions in little bowls on the side of this dip when I serve this. People may like to add these to the top of their crackers. I sometimes also add a little bit of finely minced, hard boiled eggs.

Liver Sausage Spread is a classic retro recipe that everyone ends up loving even if they are not sure about it at first. Ingredients

  • 8 ounce tube of Braunschweiger (liver sausage)
  • 8 ounce packed of cream cheese, softened
  • 1/4 to 1/3 cup of very finely minced white onion
  • 1/4 to 1/3 cup of very finely minced dill pickles
  • 1/2 tablespoon of dried dill
  • 1 teaspoon of garlic salt
  • 1 teaspoon of onion powder
  • 1/2 tablespoon of horseradish or dijon mustard
  • saltine crackers for serving
  • Dried dill or dried parsley for garnish
  • Everything But The Bagel Seasoning for garnish *optional

Instructions

  1. Very finely mince the white onion and the pickles. Set aside.
  2. In a bowl or stand mixer, blend the braunschweiger and the cream cheese together until smooth.
  3. Add in a splash of the pickle juice, approximately 1 teaspoon, then add in the garlic salt, onion powder, dried dill, and mustard. Mix until well combined.
  4. Add in the onion and pickle and mix until well combined.
  5. Add this all to a bowl and refrigerate overnight or at least 4 hours.
  6. When it has sat, spray a piece of plastic wrap with some non stick spray and rub a little on your hand, add the braunschweiger mixture to the piece of plastic wrap and use the plastic wrap and your hand to form this into a log shape. use the plastic wrap to transfer to a serving platter. or plate. Sprinkle with the dill or parsley and the everything but the bagel seasoning.
