For an impeccable result, it is important that the courgettes are cut into very thin slices with the help of the appropriate mandolin; once passed in extra virgin olive oil, seasoned with a pinch of salt and pepper, and then in a rich breading based on breadcrumbs, parmesan and chopped parsley, they are simply stuffed with provola and cooked ham , then rolled up very tightly like a roulade.

The rolls thus obtained are placed side by side on a baking tray, so that they do not lose their shape, and then cooked in the oven, for a final result that is stringy in the heart and crunchy and golden on the surface. How to prepare zucchini rolls

Step 1

  • Wash the courgettes, peel them and cut them into slices with the help of a mandolin
