This Easy Homemade Beef Stew is the perfect comfort food, filled with tender beef, hearty vegetables, and rich flavors. It’s an easy recipe that’s sure to become a family favorite.

Ingredients for Easy Homemade Beef Stew

  • 2 lbs Beef Chuck Roast, cut into 2-inch chunks, excess fat removed
  • 1 Tsp Kosher Salt
  • ½ Tsp Coarsely Ground Black Pepper
  • 2 Tbsp Gluten-free All-Purpose Flour (or Whole Wheat for non-gluten)
  • 2 Tbsp Olive Oil
  • ½ Yellow Onion, chopped large
  • 4 Garlic Cloves, minced
  • 1 Large Carrot (or two small-medium), cut into 2-inch chunks
  • 2 Yukon Gold Potatoes, diced into 2-inch pieces
  • 2 Cups Beef Broth
  • ¼ Cup Tomato Paste
  • 1 Tbsp Worcestershire Sauce
  • 1 Bay Leaf
  • 2 Tsp Fresh Thyme Leaves (to garnish)

Instructions for Making Easy Homemade Beef Stew

1: Preparing the Beef

  1. Preheat your oven to 325°F.
  2. Season the beef chunks on all sides with salt and pepper.
  3. Sprinkle the flour over the beef, tossing to coat evenly.

2: Browning the Beef

  1. In a large Dutch oven, heat the olive oil over medium heat.
  2. Brown the beef in batches, cooking each batch for 3-4 minutes until browned on all sides. Transfer the browned beef to a plate and set aside.

3: Cooking the Vegetables

  1. In the same Dutch oven, add the onions, garlic, and carrots.
  2. Cook, stirring occasionally, for 2-3 minutes until the vegetables are slightly browned.

4: Combining Ingredients

  1. Add the potatoes, beef broth, tomato paste, bay leaf, thyme, and Worcestershire sauce.
  2. Use a wooden spoon to scrape the browned bits from the bottom of the pot.

5: Cooking the Stew

  1. Bring the mixture to a simmer while stirring.
  2. Return the browned beef to the pot, cover the Dutch oven, and transfer it to the preheated oven.
  3. Cook the stew for 2-2.5 hours, or until the beef is tender.

6: Finishing Touches

  1. Remove the bay leaf from the Beef stew.
  2. Taste and season with additional salt and pepper if needed.
  3. Serve the Easy Homemade Beef Stew warm, garnished with fresh thyme leaves.
