Preparation
Start by mixing 95 ml of water with 1.5 g of salt in a bowl. Make sure the salt is completely dissolved in the water.
Gradually add 150 g of flour to the water and salt mixture, mixing well until a dough forms.
Once the dough is formed, work it with your hands until it is smooth and homogeneous.
Cover the dough and leave it to rest for 10 minutes to relax.
Preparation of the filling
While the dough is resting, wash and finely chop the spring onion.
Place the chopped green onions in a bowl and add a pinch of baking soda. The baking soda will help bring out the flavour of the shallots.
Prepare 50 g of cheese for the filling.
In another bowl, mix the flour and cornstarch.

Assemble the Pancitos and cook
Divide the dough into 4 equal parts and form each into a ball.
Roll out each ball of dough on a floured surface to form a circle of about 18 cm in diameter.
Sprinkle the flour and cornstarch mixture over the rolled out dough to prevent it from sticking. Repeat this process with the remaining pieces of dough.
Stack the rolled out dough pieces and sprinkle the flour and cornstarch mixture again between each layer.
Roll out the stacked dough to about 28cm in diameter. Gently peel the overlapping dough layers apart until you have one thin sheet.
Melt 20g of butter and brush it over the top of the dough. Sprinkle the chopped green onions over the melted butter and top with the cheese. Then, fold the dough over.
Heat a little oil in a frying pan over medium heat. Fry the rolls for about 2 minutes on each side, or until golden and crispy. Once fried, drain on paper towels to remove any excess oil.
That’s it! These green onion stuffed rolls are ready to enjoy. Serve hot and enjoy its crispy exterior and soft, tasty interior.
