Italian Chocolate Pudding

Personally, I don’t think pudding gets the attention it deserves. And I’m not talking about the little cups of store-bought pudding, I mean the homemade custard pudding made from scratch with real, wholesome ingredients. For instance, this Italian Chocolate Pudding. It’s rich, it’s velvety, and it will absolutely steal the show on any occasion. I know making a custard from scratch can be intimidating, but we’ll walk you through every step of the process, don’t worry!

No fancy ingredients necessary for this recipe, just some kitchen staples and a bar of good semi-sweet chocolate. You’ll start out by warming the milk and heavy cream until they just begin to simmer. Remove the pan from the heat and get started on the eggs. You’ll want to separate the yolks and set the whites aside for another use. Mix a bit of sugar into the yolks until the mixture is airy and lightens in color. Then, slowly pour a thin stream of the warm dairy mixture into the yolks while vigorously whisking. Rushing this process can curdle your eggs and we don’t want that. Take your time and put some elbow grease into the whisking!

Once the yolks and dairy are fully combined, pour the mixture back into the saucepan and place on medium heat. Continue whisking as the custard cooks until it’s thick enough to coat the back of a spoon. Next, pour the custard over the chocolate and allow it to melt for a couple minutes. The final step will be adding the remaining ingredients and mixing until smooth. You can then taste your gorgeous homemade chocolate pudding and give yourself a pat on that back. Serve it up with some whipped cream and enjoy!

Ingredients
  • 1 cup heavy whipping cream
  • 1 cup whole milk
  • 6 egg yolks
  • ¼ cup granulated sugar
  • 4 oz semi sweet chocolate, roughly chopped
  • 1 tablespoon butter
  • Pinch of salt
  • 1 teaspoon vanilla
Preparation
  1. Add heavy cream and milk to a medium-sized saucepan and place over medium heat. Bring mixture to a simmer, then remove from heat.
  2. In a large bowl, beat egg yolks and sugar together until smooth and airy.
  3. Slowly pour a thin stream of the warm dairy mixture into the eggs while constantly whisking until the mixtures are fully combined.
  4. Pour the mixture back into the saucepan and return to medium heat.
  5. Stirring constantly, heat the mixture for 4-5 minutes until it starts to thicken.
  6. Add the chocolate to another large bowl and pour the warm cream mixture over top. Let it sit for 1-2 minutes for the chocolate to melt, then add the butter, salt, and vanilla extract and whisk until smooth.
  7. Pour the warm pudding into individual serving dishes if desired and place in fridge to set for 1 hour.
  8. Serve with whipped cream and fresh fruit.
